Pan con Tomate

A must for any tapas table. Fresh tomatoes, garlic, and toasted bread. Simply perfection.

Ingredients
  

  • ½ pint fresh tomatoes
  • 1 garlic clove, grated
  • ½ baguette, sliced
  • extra virgin olive oil (garnish)
  • parsley, chopped (garnish)

Instructions
 

  • Heat the oven to 450°. Place the baguette slices on a baking tray and toast until lightly crisp.
  • In a food processor, pulse the tomatoes until almost smooth.
  • Grate the garlic into the tomatoes and stir. Season with salt & pepper.
  • Spread the tomato mix onto the baguette. Garnish with a drizzle of olive oil and parsley. Serve immediately.
